Sweet Potato and Kale Chicken Patties

Ingredients
Scallions, Sweet Potato, Kale, Chicken Breast, Garlic, Dijon Mustard, Rosemary, Egg, Coconut Flour, Sea Salt.
Directions
Cook scallion, sweet potato 6-7 minutes. Add kale and cook 3 minutes (until wilted). Set mixture aside. Ground chicken. Add salt, garlic, paprika, Dijon mustard, rosemary, egg, coconut flour and sweet potato mixture. Cover with plastic wrap for at least 4 hours, or better, leave over night. Divide into 6 - 7 patties. Coat large non-stick pan with coconut oil or bacon greese. Add patties and cook until golden crust forms (5 - 6 minutes). Flip and cook until golden crust forms on opposite side. Serve as is or with a side salad.
