Roasted Cauliflower

Ingredients
1 1/2 cups cauliflower florets1 tsp extra-virgin olive oil1/4 tsp garlic powder1/4 tsp pepper Salt to taste
Directions
Preheat oven to 425 degrees.

In a medium bowl, combine the cauliflower and spices. Toss to mix.

Drizzle on the oil and toss again.

Transfer the mixture to a small nonstick baking dish. Bake for 15-17 minutes, tossing as needed, or until lightly browned and crisp tender.

Serve immediately. Makes 1 serving.

    Yummy! Yummy! I cut the cauliflower small added freshgarlic, garlic powder, evoo and a small bit of kosher salt close to the end of cooking. Baked for approx. 30-35 minutes at 425. Cauliflower took on more flavor as it browned. It did not become mushy. It tastes great! Wonderful recipe. :-) - 4/19/10

    This was the first cauliflower recipe I ever made. I had to find a recipe to use all the cauliflower we get from our co-op that I usually let go to waste because I didn't know what to do with it and I don't like it raw. We all liked it and will cook it again. It was very easy. - 10/9/08

    Yum!! I followed the recommendations in the comments and cut it a little smaller, roasted it a little longer. I mixed mine with whole wheat penne rigate and shredded parmesan for an entree instead of a side, and it was DELICIOUS! - 4/10/10

    Really good! I used the seasoning as given, but I baked at 425 degrees for 30 minutes. The cauliflower remained firm and browned nicely. I plan to make this again using different seasoning. Can't wait!! - 3/17/12
