Pollock Bake With Spinach and Tomatoes

6 fillets2 cups fresh spinach, chopped1/4 cup chopped onion2 cups crushed tomatoessalt and pepper to taste1/2 cup parmesan cheese
Preheat oven to 350 degrees
On stove, saute onions, spinach and crushed tomatoes until the onions are softened.
Spray baking pan with cooking spray and arrange fillets in a single layer. If the fillets are large, cut them into portion size pieces.
Spoon tomato mixture over fish, top with parmesan cheese and bake for 25 minutes.
