Broccoli Cashew Beef

2 lbs stew beef12 oz cashews3 medium onions24 oz frozen broccoli floretsgingergarlic saltxanthan gumchicken brothvegetable oil
Heat large heavy pan on high. Add 1tbsp oil. Add 1 lb beef. Season liberally with garlic salt and ginger. Cook beef 1 lb at a time till browned. Remove from pan.
Add another tbsp oil. Cook chopped onions till they begin to soften. Remove from pan. Put with beef.
Add another tbsp oil. Cook frozen broccoli till it begins to soften.
Sprinkle about a half tsp of xanthan gum on broccoli. Stir in 2 cups chicken broth. Add back beef and onions. Serve over rice.
