Directions
spray a grill pan with olive oil spray, turn on medium heat. Tenderize chicken and put inside wax paper, pound thin. Season chicken to taste; put in heated pan. Turn twice to make a crosshatch design.

Mix raspberry preserves, chipotle tabasco and balsamic vinegar with a wire whisk. Spread the sauce on the chicken breast using a silicon brush, then splash the wine around the chicken. Immediately cover with a lid, and turn down the heat. Yum.
