Mediterranean Chicken Sandwich

Ingredients
2 slices sprouted grain bread1/2 chicken breast1 slice lowfat mozzarella cheese1 Tbsp hummus2 dried tomatoes1 Tbsp sliced or chopped kalamata olives1 Tbsp Smart Balance Omega Plus spread
Directions
Grill the chicken breast. While it is cooking, blanch the dried tomatoes in boiling water for 3 minutes. (If you are using tomatoes in oil, just drain and rinse) Spread the hummus on one slice of bread and sprinkle with sliced olives. When the chicken and tomatoes are ready, layer them on bread and cover with cheese and second slice of bread. Heat skillet on medium, heat and melt butter spread. Grill sandwich on both sides until brown and cheese is melted (or you can use a panini press).

Makes 1 sandwich.
