Sweet potato protein pancakes

Ingredients
1/2 cooked sweet potato or yams (approx 3 oz)1 whole egg2 egg whites1/2 scoop vanilla wheyaprox 2 tbsp unsweetened vanilla almond milkapprox 1/4 tsp baking powdercinnamon to taste
Directions
Cook sweet potato/yam in microwave on potato setting. Combine all ingredients in a hand blender and blend until smooth. Pour onto a hot skillet coated with nonstick spray. Cook. Flip.
