Low Carb Brownies

Ingredients
1/2 C butter, melted1/2 C cocoa, unsweetened1 C dry Splenda or 36 drops liquid1 tsp vanilla extract1 tsp xanthan gum1/2 C almond meal1/2 tsp baking powder1/4 tsp sea salt1/4 C heavy cream2 eggs60 grams (2/3 cup) chopped pecans
Directions
Preheat oven to 350f
Grease a 9" square pan
Combine melted butter & cocoa
Add sugar, eggs, cream & vanilla.
Beat until smooth.
Add almond meal, xanthan gum, baking powder & salt.
Mix until smooth.
Add pecans; Combine.
Spread into baking pan.
Bake 20 minutes.


Serving Size: 2 carbs each when cut into 8 servings

    We've been on Adkin's for about a month and needed something good. This fit the bill nicely! The texture is different than a regular brownie but the flavor is really good. I'll be saving this one for sure!!! - 6/4/16
