Veggie Salad with TJ's Peanut dressing

Ingredients
150g Carrots200g Cucumber w/peel75g Scallions100g Shredded cabbage, white or red4tbs Trader Joe's Asian Style Spicy Peanut Vinaigrette2tbs natural rice vinegar2tbs white balsamic vinegar2tbs lime juice (fresh)2tbs Cilantro
Directions
Cut carrots, cucumber, and scallions into desired shape, suitable for salad. Combine in a bowl with both vinegars and allow to marinate for 1 to 4 hours, stirring occasionally. Drain before tossing salad.

Add drained veggies to cabbage in a bowl. Toss with the Peanut Vinaigrette and add pepper or other seasoning to taste. Divide evenly among 4 bowls. Finish with a squeeze of lime, and a good pinch of chopped cilantro.
