1 package boneless, skinless chicken thighs (10 thighs)1 can chipotle peppers in adobo sauce (7oz)1 can diced green chiles (4 oz)1 bag frozen sweet yellow corn (16 oz)1 can black beans, drained and rinsed (15 oz).25 cup cider vinegar1 can tomato sauce (15 oz)Spices to taste: Cumin, coriander, paprika, cinnamon, salt, chili powder1 tsp brown sugar
Mix all ingredient in crockpot, set on low for 6 hours. At end of cooking time, remove chicken and chipotles, shred and add back in. Serves 6.
