1 cup Whole Wheat Flour 1 tsp Baking Soda 1/2 tsp Cinnamon, ground 1/2 cup Applesauce, unsweetened 1/2 cup water 1/2 cup Sugar Free Syrup (or sugar substitute)
Spray 12 cup muffin tin and preheat oven to 350. Mix flour, soda, and cinnamon together. Add applesauce, sugar substitute and water, mix until just blended. Bake at 400 for 10-15 minutes or until tops have lightly browned.
You could make these with soymilk and diced apples and nuts mixed in, but it will alter the calorie content (which is approximate). I have also made these with half a mashed banana instead of applesauce, but again, that alters the calories.
