Number of Servings: 16

Ingredients

    Ground Flax Seed (16 Tbsp)
    Ground cinnamon (1 Tbsp)
    Ground Ginger (1 Tbsp)
    Stevia Plus (4 packets OR to taste based on preference)
    Water (approx 8oz, mixed in to batter like consistency)
    Cooking Spray (fat free) (light coating on pan)

Directions

Mix all ingredients in a bowl and mix until mixture is like batter. Spray cookie sheet with cooking spray. Spread mixture until thin and even. Score into 16 crackers. Bake for 25 minutes at 275 until crackers are no longer soft. Works out to 1 Tbsp of flax per cracker. Serve.

    I made the raw version with only a few changes. Instead of dried ginger and Stevia, I used fresh ginger and agave
    nectar. Then put it in the dehydrator. It was very tasty!
    Next time I might try a little cacao in it! Even raisins or dates might do well for the sweetener.

    I don't use stevia so I substituted demerara and I forgot the ginger, but they still came out great. Very easy , healthy and tasty crackers. Thanks - 3/25/10

    I would put the recipe on sheets in the dehydrator for raw flax crackers; also change it by and veggies to it instead of making sweet crackers - 3/16/10
