Roasted Red Pepper Sauce with Meatballs

Ingredients

Sauce4 peppers ( 3 red, 1 yellow)6 medium tomatoes2 large onions3 cloves garlic1/4 cup olive oil1/2 tsp. salt and pepper4 tbsp. chopped fresh basil2 12 oz cans whole tomatoesMeat Balls12 oz extra lean ground beef or turkey1/4 cup finely chopped onions2 tbsp. grated Parmesan cheese1 egg1/4 tsp. pepper
Place all vegetable ingredients on cookie sheet and coat with oil. Bake for 1 hour in a 350F oven or until the vegetables are soft and slightly browned.
Purée the vegetables in a food processor. Add 2 12 oz cans of whole tomatoes and purée until chopped and blended. Add chopped fresh basil.
Meat balls
Mix all ingredients together. Roll mixture into tiny meat balls and place on cookie sheet. Bake 20 minutes in 350F oven.
Add cooked meat balls to the tomato sauce. Heat and serve over pasta or spaghetti squash.
