6 cups blanched almond flour2 tsp baking soda2 tsp salt4 eggs1 cup pure maple syrup2 tsp vanilla extract1 cup coconut oil, unrefined1 ˝ cups 72% dark chocolate chips
Heat oven to 375 degrees F. In a medium size mixing bowl combine dry ingredients. In a small mixing bowl beat eggs, ˝ cup maple syrup and vanilla extract with hand mixer. Pour wet ingredients into dry mixture and beat with hand mixer until combined. Add melted coconut oil into batter and continue to blend until combined. Stir in chocolate chips, pecans and coconut. Drop balls of dough on parchment-lined baking sheet, about a tablespoon in size.
Bake cookies for 15 minutes at 375 degrees F. Let cool and serve.
