Seedy Granola

Ingredients
5 C Oatmeal, old-fashioned 1/2 C Coconut flakes, Sweetened1/4 C Pumpkin seeds 1/3 C Dates, Dried Chopped1/2 C Apricots, Dried, Chopped1/4 C Canola oil 1/4 C Agave syrup 1 Tsp Cinnamon 1/4 C Flax seed Toasted2 Tbsp Chia seed 1 Tsp Vanilla Extract
Directions
Heat OATS on ungreased sheet pan at 350o 10 minutes.
Stir in COCONUT, toast 10-15 minutes.
Stir in PUMPKIN SEEDS, toast 5 minutes, until seeds are crunchy.
Add DATES-APRICOTS.
Mix OIL through VANILLA. Pour over OAT mix, stir until well coated. Return to pan, bake 10 minutes, stir, bake 10-15 min, until evenly brown. Cool then stir until crumbly.


Serving Size: makes about 7-1/2 cups or 15 1/2-cup servings
