Quinoa Cranberry Chicken Salad

Ingredients
18 oz grilled chicken breast, no skin1/2 cup of dry quinoa2/3 cup of dried cranberrieshandful of fresh cilantro, coarsely chopped (about 3 TBS)1 TBS Extra Virgin Olive Oil1 TBS white vinegar1TBS honey1/4 cup orange juice1 tsp sea salt1 tsp ground cardamom1/3 cup chopped pecans
Directions
1. clean chicken breasts of visible fat and sprinkle with salt & pepper, grill on a hot grill for about 5 minutes per side. Once cooled, chop chicken into approx 1 inch cubes and set aside.

2. prepare 1/2 cup of quinoa as directed on package.

3. mix all other ingredients into fully cooked quinoa including the grilled chicken.

4. Separate into six servings and serve hot or chilled.

Serving Size: makes 6 servings, about 1/2 cup each as prepared
