Black Soy Bean Chili

2 Tablespoons vegetable oil1 green bell pepper, cut into large dice1/2 cup chopped red onion2.5 pounds ground chuck (you may use any cut of beef you like)1/4 cup chili powder3 tablespoons ground cumin1 teaspoon minced fresh garlic2 teaspoons kosher salt1 teaspoon freshly ground pepper1/2 teaspoon garlic powder1/4 teaspoon cayenne pepper3 Roma tomatoes, dicedOne 15-ounce can black soy beans, drained and rinsed2 tablespoons chopped fresh cilantroOne 15-ounce can tomato sauce (I use organic)
Yield: 8 servings

1. Heat the oil in large skillet over medium-high heat. Add the pepper and onion and cook until slightly tender.
2. Add the beef and spices and cook until the meat is thoroughly browned. Drain off excess fat.
3. Add diced tomatoes and beans and tomato sauce and simmer for about 10 minutes, stirring occasionally.
4. To serve, garnish chili with cilantro.
Extras:
Top with a low-carb cheese of your choice, sour cream or sliced green onions. Freeze extras for later. Or use as a topping for a salad with cheese.
