Kisir (Turkish Bulgur Salad)

1 cup fine bulgur (cracked wheat)2 tbsp olive oil1 onion, diced2 tbsp tomato paste1/3 cup lemon juice½ tsp salt1 tbsp cumin2 tomatoes, diced4 fresh green onions, diced1 cup chopped parsley½ tsp mint
Put the bulgur in a large bowl, and cover with 2 cups of boiling water. Leave it to sit for about 5 minutes, and fluff with a fork. The bulgur should be tender, and the water completely absorbed. Chop and toss all the ingredients into the bulgur, and then place it in a glass dish lined with lettuce leaves for presentation. Top with a few sprigs of parsley. Let it cool, and serve.
