500g/18oz minced/ground beef100g/3.5oz pureed carrot150g/5oz mushroom pieces1 tbsp Olive oil1/4 tsp saltBlack pepper2 sprigs of parsley2 cups water500g/18oz butternut squash, mashed1 tbsp butter
Preheat oven to Gas Mark 6 400F 200C
Saute the mushrooms in the olive oil. Add the beef and continue cooking for 5 mins, stirring regularly. Add the pureed carrot, salt, pepper, parsley and water. Simmer for 15 mins or until water has mostly evaporated.
Tip meat mixture into a baking dish and cover it with the butternut mash. Dot the top with butter.
Place in the oven and cook for 35-45 minutes.
Serving Size: Makes 4 servings
