8 small chicken thigh cutlets, debonedTin of indian flavoured tomatoes1 bay leaf2 teaspoons of Branston pickle1 teaspoon of tomato puree1 medium sized onion1 clove garlic2 tablespoons curry powder1 teaspoon ginger podwer2 teaspoon cumin 2 tablespoon of coconut milk powderRice to serve (basmati)
Put all ingredients EXCEPT the milk powder into a large saucepan and bring to the boil. Cover and simmer for 45-60 minutes until chicken soft and flavour infused. Add milk powder, stir through and leave uncovered for 5 more mins.
