Chicken and Mushrooms in a Garlic White Wine Sauce

Ingredients
1 lb chicken, cut up in bite size pieces2 tsp butter2 tsp olive oil1/4 cup flour3-4 garlic cloves, minced8-12 oz mushrooms1/4 cup white wine1/3 cup chicken brothsalt and pepper to taste1/4 cup chopped parsley
Directions
Roll chicken pieces in flour. Cook in skillet in 1 tsp butter and 1 tsp oil, until no longer pink. Set aside, covered, in warm oven.
Add addn'l butter and oil to skillet. Cook garlic a few seconds. Add mushrooms, salt and pepper. Cook until golden, about 5 min.
Add wine, broth and parsley. Cook until liquid reduces by half, about 5 min.
Top the chicken with the sauce and serve.


Serving Size: Divide dish into 4 equal servings.
