Donner's Amaranth Lentil Patties

Ingredients
1/2 cup dry amaranth2/3 cup dry lentils1 1/2 cup water2 cups water1/2 cup finely chopped onion1 clove garlic minced1 cup Quaker old-fashioned oatmeal, uncooked1/2 cup cilantro chopped1/4 cup PB2 peanut butter powder2 tbsp 7 spice2 tbsp molasses1 tsp salt1/4 tsp cayenne
Directions
Put the amaranth and 1 1/2 cups water in a pan. Bring to a boil and then lower heat to a simmer for about 25 minutes. The amaranth will be sticky when it is done. At the same time, put the lentils and 2 cups water in a pan. Bring to a boil and then lower heat to a simmer for about 25 minutes until the lentils are cooked through and a little dry.

While the amaranth and lentils are cooking, chop the onion and garlic. Using a small electric chopper, chop the oats for about 30 seconds to break it up into smaller pieces. Chop the cilantro. Mix the onion, garlic, oats, cilantro, 7 spice, salt, and cayenne together and set aside.

Put the cooked amaranth and lentils in a large bowl. Add the onion, garlic, oats, and spice mixture and stir thoroughly. Add the molasses and stir thoroughly again.

Put the Panko crumbs into a bowl. Scoop out a generous 1/4 cup of the patty mixture and dump it into the Panko. Pat the Panko onto all surfaces. You can cook the patties several different ways either on the stove top or in the oven. Heat a skillet and either spray with non-cook spray or coat with oil of choice. Place patties in the skillet leaving 2 inches of room between each. Cook for about 5 minutes per side or until they are as crispy as you like.

In a 350 degree oven you can coat a baking sheet with cooking spray or oil and place the patties on it. Cook for 20 minutes per side.

For a lower fat option, line the baking sheet with parchment paper rather than coating it with oil. Cook the patties in a 350 degree oven for 20 minutes per side.
