Cannelini Beans with Chorizo and Spinach

Ingredients
1 can (425 grams) cannelini (white) beans2 links fresh chorizo sausage2 or 3 garlic scapes, chopped into 1/4" pieces1 T. olive oil2 cups chopped fresh spinach1/4 t. crushed red pepper flakesSalt and pepper to taste
Directions
Cook chorizo sausage links in medium skillet until brown and firm to the touch. Set aside. Add olive oil to skillet and saute garlic scapes until they start to become translucent. Add the cannelini beans with liquid and the red pepper flakes, salt, and pepper; let simmer for a few minutes. Add chopped spinach and continue simmering until spinach begins to wilt. Slice the chorizo links and add to mixture, stir, simmer for a few more minutes, and serve.
