1 pound boneless skinless chicken breastsMINT-YOGURT MARINADE1 cup plain low-fat yogurtJuice of 1/2 lemon1 1/2 tablespoons chopped fresh mint2 garlic cloves1-inch piece fresh ginger, peeledORANGE-DILL MARINADE1 cup fresh orange juice1 teaspoon grated orange rindDash hot pepper sauce1 1/2 tablespoons olive oil2 tablespoons chipped fresh dill2 garlic cloves1 scallionVINAIGRETTE MARINADEJuice of 1 lemon1 1/2 tablespoons olive or safflower oil1 tablespoon soy sauceDash of hot pepper sauce2 shallots or 1 small onionFreshly ground black pepper1 teaspoon dried rosemary or oreganoTo prepare chicken, remove and discard all fat, cut chicken into long 1-inch-wide strips, or into 1 1/2 inch cubes, and place in bowl. To prepare any of the marinades, place all ingredients in blender or food processor and blend until garlic or shallots are chopped fine. Pour over chicken and mix ingredients well. Cover and refrigerate for 2 or 3 hours. Preheat broiler. Thread chicken on skewers and broil 3 1/2 or 4 inches from heat source for 4 or 5 minutes, without turning, until chicken is cooked and lightly browned. Serves 4.
