Chunky Pasta Sauce

1 can (14.5oz) diced tomatoes1 can (8oz) tomato sauce2c water1tbsp olive oil1/2" thick onion slice, diced4 cloves garlic, minced3/4c sliced zucchini1/2c sliced baby portabella mushrooms1/4 of a green bell pepper, diced1/2tbsp dried rosemary1/4tbsp dried oregano1tsp dried basil1/4tbsp dried parsleygarlic saltsalt & pepper
in medium saucepan, bring tomato sauce and diced tomatoes (juice as well) to a boil, add bell pepper, zucchini and half the garlic, reduce heat and simmer until most water is evaporated, stirring occasionally
meanwhile saute mushrooms in olive oil until softened, add onion and remaining garlic, saute until onion is transparent
add herbs, garlic salt and mushroom mixture to sauce, stir well, add salt and pepper to taste
add water, simmer 20-30 minutes stirring occasionally
