Ingredients: 1 cup - Fresh or Canned Pumpkin3 1/2 cups - Flour1 cup - Sugar2 - Eggs1 1/4 cup - Skim Milk1/4 cup - Soft Butter, unsalted1 cup - Raisins4 tsp - Baking Powder1/2 tsp - Cinnamon1/2 tsp - Nutmeg1/2 tsp - Salt
Directions
How to Make Pumpkin Raisin Muffins:
1. Preheat oven to 400 degrees.
2. Put muffin cups into muffin tins or grease the tins.
3. Cream butter(or margarine) and sugar until fluffy.
4. Beat in pumpkin and eggs.
5. Dredge raisins in 1/2 cup of flour.
6. Sift remaining flour and spices together.
7. Pour milk into the pumpkin mix.
8. Mix in dry ingredients by hand until just mixed.
9. Stir in raisins.
10. Spoon mix into paper cups in muffin tin or coat the muffin tin with non-stick cooking spray.
11. Bake at 400 degrees for 20 - 25  minutes.
12. Let rest in the pan for approximately 5 minutes.
13. Remove from pan & cool on a wire rack.
