Curry Chicken Salad

Ingredients
2 chicken breast, cooked (cook in pot of boiling chicken stock for 10 minutes, then let sit to cool in stock for 15 minutes, then chop)1 small apple, coarsely chopped3 tbsp light mayo1 tbsp hot mango chutney1 tsp curry paste12 ryvita slices (optional, not included in analysis)
Directions
Mix apple and chicken together in a large bowl. In a smaller bowl, mix mayo, chutney and curry together, then add to chicken mixture. Serve on ryvita crackers (3 per person)
