broccoli and cheddar cheese soup

Ingredients
Cheddar Cheese, .75 cup, dicedBroccoli, fresh, 3.5 cup, chopped Chicken Broth, 1 cup (8 fl oz) Scallions, raw, .25 cup, chopped Garlic, 1 clove *Onion powder, 1 tsp Garlic powder, 1 tspOlive Oil, 2 tbsp Water, tap, .5 cup (8 fl oz) 2 tbsp butter (options)Salt and pepper to taste
Directions
In a medium pot, Cook broccoli, scallions, garlic, onion and garlic powder, olive oil (and butter) in broth for 10-15 minutes.

transfer broccoli mixture from pot to blender/food processor and blend until smooth.

pour broccoli mixture back into pot and add cheese and water (to desired consistency) on low head to melt cheese. Add Salt and pepper to taste.

Serving Size: makes 2 servings (about 1 cup each)
