JV Low Carb Mock Beef & Mushroom Pie

Ingredients
1 # Lean Ground Beef1 can Golden Mushroom soup1.5 C sliced mushrooms1 Head cauliflower1 egg1C shredded cheddar cheese1 clove garlic
Directions
Cook ground beef adding pepper, add mushrooms and minced garlic clove, sauté until soft. Remove from heat, add golden mushroom soup, let sit to cool a bit before adding egg. Add egg and spread into bottom of large round casserole dish.
While beef is cooking, break up cauliflower, cover with plastic wrap and microwave for 5-7 min. Puree with hand blender, adding a little butter and milk if necessary to get to spreadable consistency.
Spread cauliflower over meat and mushroom mixture, spread to edge. Put in oven at 375 for 20 min, sprinkle cheese over top and cook for 15 min more.

Serving Size: Makes 6 servings, in deep round casserole dish
