Fried Matza

Ingredients
8 pieces matza (I used Yehuda Matzos to figure the calories)6 eggssalt to taste4 T. canola oil
Directions
Crack 6 eggs into large bowl. Beat eggs with fork. set aside. Rinse matza under cold water, turning each piece to soak. Break wet matza into the bowl. Mix well. Heat frying pan with 1 T oil. Add 1/4 of mixture to hot pan (should not be more than 1/2" thick.) Allow to cook until browned, flip and cook other side to golden. Slide onto serving plate and repeat til batter is finished. (Only add another T of oil after 2nd round is made)
