Tofu Pad Thai

Ingredients
1/2 lb rice noodles4 tbsp vegetable oil2 egg whites1 medium squash1 bundle asparagus1 block firm tofu1/2 bottle thai peanut sauceFresh basil to garnish
Directions
Soak your rice noodles in hot water for 30 min. Meanwhile chop up tofu and vegetables. Heat 2 tbsp of vegetable oil, add egg whites and scramble add tofu and vegetables. Cook through then add the rest of the vegetable oil and drained noodles stir fry for 7 min add Peanut sauce stir fry for 1 min.

Serve warm with fresh basil garnish
