Ingredients
1 tbsp olive oil1 cup onion, chopped1 tbsp fresh ginger root, grated1 tsp cumin seed (or ground)1 tsp turmeric, ground1/2 tsp red pepper, crushed4 cloves garlic, minced2 cups cauliflower, chopped2 cups tomatoes, chopped2 1/2 cups water1 cup lentils, dried2 tbsp lime juice1 tbsp fresh cilantro, minced3/4 - 1 tsp salt6 cups cooked basmati rice
Directions
Heat olive oil in large pan over medium-high heat. Add onion, ginger, garlic, cumin, turmeric, red pepper, and garlic. Cook until onion is transparent but not brown. Add cauliflower and tomatoes. Cook 1 minute. Stir in water and lentils. Bring to boil. Cover, reduce heat, and simmer for 30 minutes. Stir in lime juice, cilantro, and salt. Serve 1 cup lentils over 1 cup cooked basmati rice.
