Summa Quinoa Fried "Rice"

Ingredients
1 1/3 Quionoa cooked1 1/3 frozen peas1/2 c Chopped Carrot 2 Large Eggs1 TBSP Olive OilShallots
Directions
Microwave carrots and peas for 3 minutes.
Sautee shallots in olive oil, and add vegetables when softened. Mix in beaten eggs, moving them quickly.
Add Quinoa and stir, cook over med heat for 4-5 minutes to ensure egg is cooked.

Stir in Soy sauce and serve
