Quiche

Ingredients
3 eggs1 cup egg whites6 oz evaporated milk1 tbsp thyme1tsp ground dry mustard1 onion2 packages mushrooms (crimini, shiitake , button)2/3 cup gruyere cheese1 tsp salt1 tsp pepper2 cups cooked spinach (optional)1 tsp ground nutmeg (optional)
Directions
Preheat oven to 350. Grease pie plate with cooking spray. Cut onion into thin qtr moon slices or to your desired shape. After rinsing mushrooms, cut into smaller pieces. Add both onion and mushroom to a pan with 1 tbsp olive oil and sauté until tender. If adding spinach, add once mushrooms and onions are cooked. In a bowl whisk together eggs, egg whites, evaporated milk, thyme ( remove leaves) ,salt and pepper. Transfer vegetables to bottom of pie plate. Pour egg mixture over the vegetables. Top with cheese. Bake for 30 minutes at 350.
