Low Carb High Protein Low Fat Pizza (Frittata)

Ingredients
Chop onions & squeeze two cloves garlic in a press. Preheat a heavy, oven safe skillet with 1 Tbs olive oil, making sure oil covers the whole pan. When oil is hot enough, it will do this. Medium heat is fine. Mix together 1 cup egg beaters & 1 cup non fat cottage cheese. Beat well & pour into the pan. Sprinkle 1/2 C chopped green onions & 2 C fresh sliced mushrooms into mix & continue to cook on top of stove. In separate pan, brown lean ground sirloin (10% fat). Drain off extra fat. Put 1/2 lb meat on top of onions & mushrooms. Drizzle 1/2 C prepared spaghetti sauce on top of meat (a good way to use up your homemade leftovers, also). Add 8 oz mozzarella cheese, then 3 oz of baby spinach & then 8 oz of pizza blend cheese. Put into 350 degree preheated oven for 10 to 15 minutes until the cheeses are bubbly & set through. Take out, let cool for 5 minutes to set & cut into 12 pieces.
Directions
Need an oven proof large skillet/frying pan.
Begin cooking over medium heat on top of stove as for an omelette, finish inside the oven as for a casserole.
