Just Like Stuffed Baked Potatoes

Ingredients
16 oz package frozen cauliflower8 oz cream cheese8 oz shredded cheddar cheese3 green onions, chopped1/4 tsp salt1/4 tsp pepper3 pieces bacon, chopped and fried until crispPaprika, optional
Directions
Cook the cauliflower until soft; drain very well and break up florets a bit with a spoon. Put into a greased 8x8 baking pan. Mix in cream cheese, cheddar, green onion, salt, pepper, and bacon. Dust top with paprika, if desired. Bake at 350 degrees for 20-40 minutes, until browned and bubbly. Or, microwave, loosely covered, for about 40 minutes on 50% power, turning dish after 20 minutes. Makes 6 servings. (5.5carbs each)
