2 medium zucchini, sliced 1/4" thick1 medium yellow potato, sliced 1/4" thick2 Roma tomatoes, sliced 1/4" thick1 14 ounce can of tomato sauce3 garlic cloves, crushed or minced1 tsp oreganopinch cayenne pepper1 tsp Mrs. Dash Garlic & Herb1 Tbsp fresh basil, minced or 1 tsp dry2 Tbsp shredded Parmesan cheese
Preheat oven to 350º
Mix together tomato sauce, garlic and spices.
Layer sliced zucchini, potatoes and tomatoes in an 8" x 8" baking dish.
Pour tomato sauce with spices over veggies and cover with foil.
Bake covered for 35 minutes.
Uncover and sprinkle Parmesan cheese evenly over top and bake another 35 minutes.
Remove from oven and let stand for 5 minutes.
Serve with your favorite entree and enjoy!
