Lazy Ratatouille

Ingredients
1 tbsp Olive Oil1 medium Zucchini1 medium Eggplant1 medium Bell Pepper Yellow or red1 small Chili pepper, de-seeded1 punnet (250 grams) Cherry Tomatoes1 large / 2 small Onions2 cloves GarlicRosemary, Thyme and Basil (fresh or dried)Salt and Pepper to taste
Directions
Makes 4 portions of about 1 cup / 175 grams
Pre-heat oven to 200°C/390°F/Gas mark high
Brush a baking pan with olive oil
Keep Basil for garnishing after cooking as it looses taste otherwise
Chop all vegetables into large chunks (about 1/2 thumb size and mix well with spices in the baking pan.
Bake in the oven for approx. 30 minutes, stirring well after 10 and 20 minutes.
Take out and mix in chopped Basil leaves
Serve on it's own or with Pasta, Polenta, Fish or Meat
Can also be served lukewarm.
