Chipotle Chicken Quesadilla

Ingredients
1 pound ground chicken2 tbsp. olive oil3 clove garlic, minced1 c chicken, broth1 oz. lemon juice1 tsp. kosher salt1 cup reduced fat sour cream1 tsp. chipotle adobo sauce1 cup green peppers, diced1 cup onions, raw,diced2 cups cheddar cheese, shredded 4 10" Whole Wheat Tortilla
Directions
In saute pan with olive oil, add peppers, onions, garlic
and cook for 4 minutes.
Add chicken broth, lemon juice and kosher salt.
Simmer for 10 minutes until liquid is dissolved.
Add chipotle and sour cream. Cook for another 2 minutes.
Place 4 ounce of filling on a 10" whole wheat tortilla
top with 4 ounce of cheddar cheese.
Place quesadilla on the grill to brown both sides and until
cheddar cheese melts. Serve immediately
