Corn Casserole

Ingredients
2 eggs, beaten1 pkg. corn muffin mix (8oz)1 can cream corn1 can whole kernel corn, drained1/2 cup sour cream1/2 cup margarine (melted)
Directions
Combine all ingredients and mix well. Bake at 350 for 35 minutes or until set. Makes 10 medium ice-cream scoop servings.



I use Marie Callender's corn bread mix as it has no hydrogenated oils. I use Smart Balance Plus Omega Light margarine for the same reason. You could replace the sour cream with lowfat plain yogurt to save on fat and calories.
