Chive and potato scones

Ingredients
450 g potatoes1 cup plain flour, sifted2 tbsp olive oil2 tbsp chopped chives1/2 tsp salt1/2 tsp white pepperOlive oil spray for cooking
Directions
1. (For mash potato) Cook the potatoes in a saucepan of boiling salted water till soft. Mash the potatoes after pouring off the water without adding anything extra. 2. Add the flour, olive oil and snipped chives with the salt and pepper to the mashed potato. Mix to a soft dough. 3. Roll out the dough on a well floured surface to a thickness of 5 mm and stamp out rounds with a 5 cm plain pastry cutter. 4. Cook the scones, in batches, on the frying pan for about 10 minutes until they are brown on both sides. Use a light olive oil spray for cooking.
