Cilantro Sauce

Ingredients
1/4 C. Olive Oil 1 T Lime Juice or a splash more to taste 1 T Vinegar or more to taste 4 C. Cilantro, coarsely chopped (1-2 bundles, depending on size) By weight, about 6-7 oz. 1 tsp Salt 2/3 C. Kirkland Greek Yogurt 2-3 cloves of garlic, crushed 1/4 tsp or more Xanthan Gum, optional, use if you want it to cling for tacos and sandwiches. Skip if making as a salad dressing.
Directions
Crush garlic, blend all ingredients with an immersible blender until smooth. Put in a squeeze bottle for easy access.

Serving Size: Makes about 24 oz. Assume 1 Tbsp servings.
