Ratatouille

Ingredients
3 cups chopped succhini1 bell pepper1 tomato1 small eggplant (2 cups)1 cup distilled white vinegar1/4 cup brown sugar
Directions
Combine all ingredients in saucepan. Mix well. Bring to a boil. Reduce heat and simmer for five minutes, stirring frequently.
