Stephs Muffins

Ingredients
2 C boiling water2C fiber cereal1 C unsweetened applesauce1 1/2 C dark brown sugar1 quart Chobani plain yogurt3 C whole wheat flour2 C unable ached flour2 C Quaker Oats. More if needed15 tbs dark chocolate chips
Directions
Add 2 C fiber cereal to boiling water, let sit & cool
In lg mixer bowl add eggs, sugar, yogurt & mix well
Add cooled scalded cereal
In lg separate bowl sift flour and baking soda, mix
Add dry mix to wet mix gradually
Add chocolate chips, mix
Spray muffin cups or use paper liners
Fill 3/4 full with batter
