Egg Cups

Ingredients
6 eggs, beaten3/4 cup diced tomatoes3/4 cup wilted spinach4oz ground turkey1 oz cheddar cheese
Directions
Beat eggs. Spray a muffin tin with nonstick cooking spray. Divide eggs evenly between 8 spaces. Add tomatoes and spinach, dividing evenly. Cook 4oz ground turkey. Divide evenly. Bake 10-15 minutes, or until just slightly wet on top. Add cheese to each egg cup. Return to oven and finish baking.
