Chicken in Lemon Sauce

Ingredients
1 1/2 lb boneless skinless chicken breasts2 tbsp white cooking wine1 tsp grated lemon peel2 tbsp lemon juice1/4 cup heavy cream3/4 cup fat free half & half1/2 cup grated parmesan cheese1 cup mushrooms, sliced
Directions
1. Preheat Foreman grill 5 minutes.

2. Add chicken and cook 7 - 8 minutes, or until cooked thru. Set aside.

3. In a medium skillet over medium-high heat, add wine, lemon peel, and lemon juice; cook and stir 1 minute. Season with salt & pepper. Gradually pour in half & half and cream, stirring constantly, until hot; DO NOT BOIL.

4. Place chicken in a medium baking dish. Pour sauce evenly over chicken. Sprinkle with cheese and mushrooms.

5. Broil chicken under high until lightly browned, about 4 - 5 minutes.
