Gluten Free Pancake

Ingredients
1/4 cup whole almonds1/4 nonfat milk1 large egg
Directions
Grind almonds to a fine powder using a coffee grinder or food processor. It's okay if there are some nut pieces in the flour. Mix with egg and milk until well blended. This will make a medium thin batter. Spray a nonstick pan with cooking spray and heat pan over medium high heat. Pour batter into pan and cook until brown (approx 5 minutes) carefully turn pancake and brown the other side. Be careful not to burn the pancake. Serve with syrup of choice, or spread with fruit spread. Also tastes good plain.
