Quinoa Pancakes

Ingredients
1 cup cooked leftover white Quinoa1/3 C quinoa flourpinch sea salt1/4 tsp. baking powder1/4 tsp. xantham gum1 tbls. coconut oil softened or melted1 tsp. vanilla extract1 tbls. maple syrup1/2 cup lowfat milk or substitute 1 extra large egg
Directions
Put first list of ingredients in a bowl, then add wet ingredients until blended. Batter will be slightly thick. Using a non-stick pan or well seasoned cast iron skillet coat with a small amount of coconut oil and scoop batter in to pan making pancakes about 4” in diameter. Cook until browned and flip.
