12 oz boneless top loin pork chops, cut into 1 inch cubes1 tablespoon fresh lemon zest1/2 cup lemon juice1 tablespoons olive oil1/3 cup coarse ground mustard3 tablespoons ground sage4 cloves garlic, minced2 teaspoons coarse ground black pepper1 teaspoon salt4 - 8x1/4" thick wooden skewersLemon wedges
1. Place chops in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl whisk together lemon peel, lemon juice, olive oil, mustard, sage, garlic, pepper, and salt. Pour marinade over chops; seal bag. Marinate in the refrigerator for 4 to 6 hours, turning bag occasionally. Drain chops, discarding marinade. Carefully thread pork chop cubes onto wood skewers.
2. Grill chops on the rack of an uncovered grill directly over medium coals for 7 to 9 minutes or until chops are slightly pink in center and juices run clear, turning once halfway through grilling. Serve with fresh lemon wedge.
