Quick and Easy stuffed peppers

Ingredients
4 oz Soyrizo (vegan chorizo)1 cup precooked brown rice2 raw bell peppers (or two large zuccini, halved with seeds removed)
Directions
So simple! just mix the soyrizo with the rice, fill the pepper and pop in the oven at 350 degrees for about 1/2 hour, or till peppers (or zucchini) are tender.

    when you don't eat your veggies raw, this is a wonderful change for the palate. i like the nutrition totals, very do-able. and looks like it can freeze well too, for an even more instant dinner when working too late to care to cook. thanks :) - 3/23/07
