Quick and Easy stuffed peppers

4 oz Soyrizo (vegan chorizo)1 cup precooked brown rice2 raw bell peppers (or two large zuccini, halved with seeds removed)
So simple! just mix the soyrizo with the rice, fill the pepper and pop in the oven at 350 degrees for about 1/2 hour, or till peppers (or zucchini) are tender.
